The Lunda Room (AMU 2nd floor) is excited to announce the ethnic menu feature for the month of April will be Asian Pacific Islander cuisine. Stop in and enjoy a blend of tropical flavors over the lunch hour. Highlights include:
- Som Tum Salad - Thinly cut green papaya tossed with tomatoes, green beans and peanuts served with a side of rice with the option of adding grilled chicken or grilled portabella mushroom
- Hawaiian Tuna Sandwich - Seared tuna on fire grilled flatbread with onions, pineapple, red peppers and mango vinaigrette
- Polynesian Chicken - Sauteed chicken with pineapple, peppers, carrots and shredded coconut in a ginger pineapple sauce on brown rice
- Holiday Pork with Sweet Potatoes - Grilled pork loin on a bed of mashed sweet potatoes with a brown sugar banana sauce
- Apple Pineapple Crumble - A tantalizing dessert to finish off your meal
