A taste of the tropics this February right here in the AMU
The Lunda Room (AMU 2nd floor) is excited to announce Jamaican cuisine as their featured ethnic fare selection for the month of February. The Lunda Room will showcase lunch specials from the region that include:
- Jamaican Pork - Pulled pork sauteed with peppers, onions, black beans, plantains and pineapple in a Jamaican spiced sauce over rice
- Veggie Rundown Stew - Sauteed vegetables in a coconut cream sauce on a bed of rice
- Jerk Chicken Salad - Jerk marinated chicken breast on spring greens with jicama, pineapple and plantain strips with jerk inspired vinaigrette
- Gungo Pea Fritters - Seared gungo pea patties on mixed greens with mango vinaigrette
