A little bit of Louisiana is coming to the Lunda Room
In the spirit of Mardi Gras, the Lunda Room (AMU 2nd floor) will showcase Cajun cuisine on the menu throughout the month of March. Get ready to have your mouth water over these Louisiana favorites:
- Cajun Crispy Shrimp Salad - Mixed greens with popcorn shrimp, red onions, peppers and Cajun dressing
- Andouille Sausage and Shrimp - Sauteed andouille sausage with shrimp, onions and peppers in a Creole mustard sauce on grits
- Louisiana Pan Fried Chicken Breast - Pan fried chicken breast on mashed potatoes with braised mustard greens and Louisiana bacon, onion and green pepper gravy
- Po'Boy Sandwich - Your choice of fried catfish or grilled portabella on a French baguette with lettuce, tomato, Creole mustard and Cajun mayonnaise served with sweet potato fries
- Peach Cobbler - A southern favorite for dessert
