Introducing the November ethnic fare feature...
The Lunda Room (AMU 2nd floor) will celebrate Arabic heritage in the month of November by offering a mixture of delicious entrees influenced by locations such as Lebanon and Moracco.
- Fattoush and Falafel Salad - Fresh diced mixed vegetables tossed in a tarator dressing accompanied by falafel and pita bread
- Iskender Chicken Salad - Great Northern beans, bulgur wheat, artichoke hearts, peppers, diced tomatoes and red onions combined with mixed greens in a spiced lemon garlic vinaigrette
- Shawarma Wrap - Middle Eastern inspired chicken rolled in Lebanese flatbread with lettuce, tomato, cucumber and lemon tahini dressing
- Moroccan Kefta - A mixture of ground beef and lamb seasoned with a blend of Moroccan spices served on a bed of basmati rice finished with Lebanese tomato sauce
