The Lunda Room (AMU 2nd floor) will highlight the flavors of Native American cooking throughout October as part of their monthly ethnic dining offerings. Featured menu items include:
- Three Sister Salad - grilled salmon on a bed of roasted potatoes, butternut squash and green beans tossed in a beerette dressing, complimented by a root vegetable hay stack
- Algonquin Wild Green Salad - fresh mixed greens tossed in a maple syrup cider vinaigrette blended with asparagus, leeks and wild mushrooms, accompanied by a cranberry fritter
- Navajo Tacos - Ground beef and beans simmered in Native American spices served over Navajo fry bread topped with cheese, lettuce and tomato
- Carne Adobado - Tender, slow cooked pork marinated in a fresh red chile sauce served with Navajo fry bread
